Pedro Castle. One of the East End's newest attractions is also its oldest. Pedro St. James Restoration Site, an 18th-century great house, has recently undergone complete renovation and today the building known as the "Birthplace of Democracy in the Cayman Islands" can be visited. Called Pedro Castle, the historic structure is situated in the community of Savannah, east of George Town.

The oldest known stone structure in the Cayman Islands, Pedro Castle was first built for William Eden, an early settler. In 1831, the house was the site of an historic meeting when residents decided that the five districts should have representation in the government. Four years later, a proclamation declaring the emancipation of all slaves was read at Pedro Castle and several other sites in the islands. The restoration of the great house to its original 1820s condition has been a major undertaking, a US $6.25 million project. The site is at the center of a 7.65-acre landscaped park atop the 30-foot Great Pedro Bluff. For the past several years, historic research into the site has been conducted.

Bodden Town. History buffs can take a self-guided tour of Bodden Town, the city that served as the original capital of the Cayman Islands. Bodden Town is home of several historic sites, including the Queen Victoria Monument, a meeting site for men in the 1920s and 1930s to discuss politics, and Gun Square, just off the main road, where two 18th-century cannons once guarded the channel; today those cannons both point downward.

North Sound Beach Lunch. To learn more about Caymanian life, the North Sound Beach Lunch/Snorkeling Trip is offered by several operators. This trip also features snorkeling at either Stingray City or the Sandbar (depending on visibility and water conditions) and the Coral Gardens. The crew dives for pink queen conch, a shellfish that's then prepared as an appetizer, sliced and marinated in lime juice, onion and seasonings. Everyone goes on shore at Cayman Kai for a Caymanian lunch of peas and rice, potato or breadfruit salad, and local fish or spicy chicken. Part of the fun is talking with the captain and crew about Caymanian life. These trips cost $50 per person and run from 9 a.m. to 3 or 4 p.m.
